
I've started taking dance classes at the Houston Metropolitan Dance Company and I absolutely LOVE IT! I'm taking tap, jazz, and ballet. Ballet and jazz are more of a workout, and tap is just plain FUN. I danced growing up, so my brain knows exactly what I want my body to do, but its been so long that my body isn't cooperating! It will all come back with time though... I'm so glad I've found a way to turn workouts into fun instead of torture. :)
I'm also starting the South Beach diet tomorrow with some coworkers. I'm looking forward to trying new foods and eating a more balanced diet - but I'm terrified at the same time because I am a total carb addict!!!! Breakfast is probably the hardest meal for me because I love cereal and muffins. Also, I pretty much refuse to cook in the morning. Getting ready for work already takes too long. So, yesterday I made these delicious make ahead egg and spinach quiche "muffins" and they are pretty darn tasty!
(I altered the recipe in the South Beach book a little)
Vegetable Quiche Cups
1/2 cup chopped fresh spinach leaves
1 cup egg beaters with yolk
1/2 cup shredded WW cheese
2 turkey sausage patties crumbled
1/4 cup diced white onions
Mix everything together and pour into a greased muffin pan. Cook at 350 degrees for 20 minutes. They will rise up a lot and then settle back into the pan when you let the pan cool.
